Awadhi Cuisine is a well-known cuisine that is nowadays heard. But you might be wondering what it is about. I am like trying to figure out what is it where before actually trying out the food. That’s what happens if you are a history buff and a food lover trying to cover halal aspects as well.

 

Awadh history

Awadh or Oudh is a place in North India and was an independent State. Also known as the Kingdom of Oudh. This was until it was annexed by the British in 1856. The kingdom lasted from 1572 -1858 in various capacities. It had an area of 68,000 KM2.

The capital ultimately being in Lucknow. Sadadat Ali Khan I became Nawab of Oudh until the Last Nawab Mohammed Wajed Ali Shah. He was later exiled by the EIC to Metiaburz, Kolkata. The origins of the Nawab are from Nishapur, Iran

They left a legacy in arts, culture, and food. No wonder if you have a Lucknow etiquette called Tehzeeb’’.

Awadhi Cuisine consists of both Vegetarian and Non Vegetarian food.

Starting with the Vegetarian food first.

 

Vegetarian menu

·         Paneer Kundan Kalian-It is a dish made of Indian Cheese called Paneer made from buffalo or cow milk. Recipe Link.

·         Navrattan Korma- a vegetable dish.

 

The Non vegetarians being more attractive and delicious.

Non Vegetarian menu:

·         Awadhi Mutton Biryani           -a delicious dish made from Mutton with basmati rice.

·         Badami Murgh- A chicken dish with many ingredients with almond paste, no wonder called Badami ‘, since Badam means peanuts in Hindi.

·         Nazqati Boti Kabab- a mouthwatering kebab made of mutton cubes.  Good for afternoon and evening snacks.

·         Murgh Sahi Korma- again a chicken gravy dish and has rating 5/5.

·         Mutton Pasandh

·         Galouti Kebab.

·         Shammi Kebab

·         Kakori Kebab

·         Firni- a dessert item

·         Seodha

·         Awadhi Nihari-delicious mutton stew which varies since a Mughal version exits also.

What is the history of Awadhi Nawabs?

The Awadhi Nawabs belonged to a Sayyid family of Nishapur Iran. Awadh is located in the eastern part of Uttar Pradesh. Previously it was the kingdom of Khosla and later it was conquered by the Mughals in 1555 by Humayan. Sadaat Khan was the first Nawab of Awadh (Oudh) in 1722 CE.

What is Awadhi Cuisine?

Awadhi cuisine started with a Nawab Saadat Khan. A great cook who sought employment at the time of Asaf ud Daula. The cook supposedly asked 500 Rupees in the 1750s. (Supposedly).
